Homemade Granola Bar Recipe

My children and I love these. They do not last a day around here no matter how many I make. I love them because they're chewy but not hard.

2 1/2 cups crispy rice cereal ( I use an organic kind)
2 cups quick cooking oats
1/2 cup raisins ( we don't put these in)
1/2 cup firmly packed brown sugar
1/2 cup light corn syrup
1/2 cup peanut butter ( I use the all natural kind)
1 teaspoon vanilla

In a large bowl combine cereal and oats and raisins and set aside.
In small saucepan, combine brown sugar and corn syrup.
Bring to a boil, stirring constantly
Stir in peanut butter and vanilla blend until smooth
Pour over cereal mixture, mix well
Press into ungreased 13 by 9 inch pan
Cool cut into 24 bars.

We have put chocolate chips in them and peanut butter chips. We've also used micro sized marshmallows.

Thanks Autumn. That sounds easy enough. Where do you find the marshmallows?

I found the marshmallows at out local Mennonite bulk food store.
