As we start our first full week of giving up fast food for Lent I decided to try something new, today I spent most of the afternoon prepping most of our meals for the rest of the week. I browned 4lb of hamburger, mixed our meatloaf, baked 10 potatoes, sliced up four to have for fried potatoes in the morning, cut up 3lb of strawberries, and washed 2lb of grapes. That takes care of our breakfast, lunch, and dinner tomorrow and I have a huge jump start on our meals for the rest of the week.
Monday is going to be baking day after our school day is over. I'm planning muffins, cookies, and brownies. I'm also going to put together some more muffin mix for the future.
If the kids are still behaving after that I'm hoping to make some freezer meals out of our chicken stockpile in the freezer.
I also have to say that this weekend was our first test of strength. We managed to go all weekend without eating out once!! It is always so tempting to take the weekend off of cooking/cleaning so I'm proud that we stayed true to our sacrifice!
